Dedicated Server Toronto

i’ve made a web application on php-mysql and its now on a dedicated server. i’ve made quite a few websites n all of them were on a shared server so all the configuration was already done for me. due to the size of this particular project, a dedicated server was in order. now my question is, how do i set up smtp? i’m using apache 2 and windows xp. i could use some help here because the product is online right now and cant support e-mails! thanks
